The Yorkshire pudding is an easy and modest dessert made of eggs, flour, and milk. The finest recipes for Yorkshire pudding call for home cooks to pour the mixture into muffin tins or frying pans and bake them for 15-30 minutes.
150 g plain flour A pinch of salt 4 eggs, beaten 200 ml milk 60 ml vegetable oil/lard
Preheat oven to 240ºC. Sift the flour and salt into a bowl. Make a well in the centre.
Pour your beaten eggs into the well and beat until smooth. Add a little milk to loosen it.
Keep stirring until all the flour has been incorporated. Beat vigorously and continue adding the remaining milk.
Chill the batter in the fridge for at least an hour to ensure the batter is well-rested.
Spoon a little fat or oil into eight moulds of a deep muffin tin. Place the tin in the oven to heat. Fill the muffin moulds about half to two-thirds full with the batter.
Return the tray to the oven for 20-25 minutes until well risen. Remove from the oven, take each pudding out of the mould and serve immediately!
