Pulao is a rice-based dish that has an assortment of types and flavours. They range from veg to non-veg. This chicken pulao recipe is a one-pot magic that you can cook in under 30 mins and become the best chef at home.
1 whole chicken, cut in small pieces 1 and ⅓ cups of basmati rice 2 medium sized onions, thinly sliced 5 garlic cloves 1 green chilli ¼ cup of oil 1 ginger, minced 1-3 cinnamon sticks 4-5 cardamoms
½ tablespoon of whole black pepper 2 teaspoons of cumin seeds 1 teaspoon coriander powder 1 teaspoon garam masala ½ teaspoon red chilli powder ½ cup of whisked curd Water as required
Take a heavy-bottomed pot. Place it over the heat on medium flame. Pour the oil.
Once the oil is hot, add the whole spices. Let it cook for a minute. Do not burn it.
Add the onions and green chillis. Cook for 10 minutes until onions are brown. Add the ginger and garlic. Saute for about 30 seconds.
Put in the chicken. Sear it for 4-5 minutes. Add the powdered spices and let it mix with the chicken and whole spices.
Turn the heat to low flame. Add the curd. Turn the heat back to medium. Stir the curd to mix with the spices and chicken. Let it cook until the curd releases water.
Pour the water in. Cook for 15-20 minutes on medium heat. Once the chicken is cooked, add the rice. Pour in more water. Bring it to a boil.
Cover the pot with the lid. Turn down the heat to low. Cook for 20-30 minutes. Uncover and stir gently. Turn off the heat. Serve chicken pulao, steaming and hot.
