Broccoli rice is a great way to use up the entire broccoli, including the stalk. It's extremely versatile and easy to sneak into everyday meals. A perfect way to finish off any leftover broccoli is to cook it with rice. So here is a simple, healthy and delicious broccoli rice recipe that can be prepared for lunch with raita or some papads.
3 cups of water 2 cups of rice 1 teaspoon of onion powder ½ teaspoon of salt ½ a teaspoon of garlic powder 1 cup of plant-based milk or unsweetened rice milk 3 cups of chopped broccoli Salt to taste Oil for cooking
Heat the water in a covered skillet until it boils.
Add the seasoning and rice, and mix thoroughly. Reduce the heat to a gentle simmer and place a lid on it.
Cook for 10 minutes. Mix thoroughly, then add all of the broccoli milk.
Put the lid back on it. You can add half a cup of water if you think it's too dry.
Cook until the broccoli is soft, about 5 to 10 minutes. Serve broccoli rice with papads or chutneys.
