There is sourdough, there is a Bombaby sandwich. Put them together, and you get the Bombay sandwich sourdough bread that is a marriage of two flavours with the right tastes!
50g bread flour 350g water 100g active sourdough starter 10g salt 15g unsalted butter 2 potatoes, boiled and sliced 1 cucumber, sliced 1 small onion, thinly sliced 1 small beetroot, thinly sliced 4 tsp mint coriander chutney 1 tsp softened butter 1 tsp sandwich masala 2 tsp grated cheese
Combine flour, water, and starter until shaggy. Rest for 30 minutes. Add salt and butter, and knead until smooth.
Cover the dough and let it sit at room temperature for 4-5 hours. Every 30 minutes during the first 2 hours, perform 3-4 stretch-and-fold exercises.
Combine chunks of potato with chutney and masala. Keep the cucumber, onion, and beetroot dry so that they don't leak excessive moisture.
Turn the dough out carefully. Flatten it to a rectangle and spread a thin layer of chutney. Add potatoes, beetroot, onion, cucumber, and cheese.
Fold the dough like an envelope and seal the filling inside. Place seam-side up in a proofing basket or bowl lined with a floured cloth.
Cold proof in the refrigerator for 8-12 hours. Preheat the oven to 250°C with the baking pot inside.
Score the bread and bake for 20 minutes covered and 20-25 minutes, uncovered at 220°C. Remove and cool before slicing!
