With temperatures peaking this May, Bel (Wood Apple) is the ultimate cooling agent for the human body. This fruit is a legendary digestive aid, helping to regulate gut flora and prevent heat exhaustion. Unlike commercial energy drinks, Bel Sharbat is naturally alkaline and incredibly hydrating. The key is to avoid modern machinery; the seeds are bitter, so manual extraction is the only way to preserve its earthy sweetness.
1 medium ripe Bel fruit (Wood Apple) 3 cups chilled water 1 pinch of black salt and roasted cumin powder 1 tbsp honey or jaggery (optional)
Crack the hard outer shell and scoop the pulp into a bowl. Add 1 cup of water and let it soak for 20 minutes.
Use your hands to mash the pulp thoroughly. Do not use a blender, as broken seeds will ruin the flavour with intense bitterness.
Strain the mixture through a coarse sieve, pressing down to extract every bit of juice while discarding the fibers and seeds.
Stir in the remaining water, black salt, cumin, and sweetener. Serve over ice.
