Kombucha is an age-old speciality fermented drink. A functional beverage, this has various health and skin benefits and aids with all gut problems too. You can also mix kombucha with a bunch of mixers and spirits for the ultimate drink!
10 cups of water 1.5 cups of scoby ¼ cup of cane sugar 2 tablespoons of black tea leaves 3 pods of cardamom 1 star anise, optional 1 inch cinnamon bark ½ teaspoon fennel seeds 2-3 dried hibiscus flowers 1 inch fresh grated ginger as needed
In a thick-bottomed pot, add the water and tea leaves.
Add in the spices such as ginger, dried hibiscus flowers, fennel seeds, cinnamon bark, cardamom and star anise.
Let the mixture come to a full boil. Turn off the heat.
Add in the cane sugar and stir well. Let it cool.
Strain the liquid into a glass container or jar. Add the scoby to the liquid.
Cover with a muslin cloth or kitchen towel. Let it ferment for 5-7 days. Serve kombucha.
