Pineapple Sheera (or Sooji Halwa) is a beloved celebration dish that balances the creamy texture of semolina with the tart, tropical explosion of fresh fruit. The acidity of the pineapple brightens the dish, preventing it from feeling too heavy. It is the perfect warm dessert for a crowd, providing a boost of Vitamin C and a nostalgic, buttery finish.

Ingredients

1 cup Rava (semolina) 1 cup fresh pineapple, finely chopped 1/2 cup sugar 1/2 cup Ghee 2 cups hot water or milk Fried cashews and raisins for garnish

Step 1

Roast the rava in ghee over medium heat until aromatic and slightly golden.

Step 2

Add the chopped pineapple and sauté for 2 minutes to soften the fruit and release its natural sugars.

Step 3

Pour in the hot water or milk, stirring quickly to prevent clumps. Cover and cook on low heat until the liquid is fully absorbed.

Step 4

Stir in the sugar and a bit more ghee. Once the sugar melts and the halwa pulls away from the pan, garnish with fried nuts and serve warm.
