INGREDIENTS

3 eggs 1 tablespoon butter 1 tablespoon sour cream/creme fraiche Salt and pepper, to taste 1 teaspoon chives, chopped finely

STEP 1

In a pan over low heat, melt the butter until it begins to bubble gently while whisking the eggs in a separate bowl.

STEP 2

Pour the mixture into the pan and use a spatula to stir constantly until curds begin to form.
