Mango sago is a classic chilled dessert that features the perfect contrast between the creamy sweetness of mango and the chewy, pearl-like texture of tapioca. It is a fantastic option for hosting because it can be prepared entirely in advance. The key to success is to cook the sago until it is completely translucent and then shock it in cold water to ensure the pearls remain separate and light.
1/2 cup small sago pearls  2 ripe mangoes, peeled and pureed  1/2 cup coconut milk  2 tbsp condensed milk or honey  Fresh mango cubes for topping
Boil the sago in a large pot of water until the pearls are mostly clear with just a tiny white dot in the centre.
Drain the sago immediately and rinse under cold running water to remove excess starch and stop the cooking process.
Whisk together the mango puree, coconut milk, and sweetener in a bowl until smooth and well combined.
Fold the cooked sago pearls into the mango mixture, chill in the refrigerator for at least two hours, and serve topped with fresh mango cubes.
