A good besan halwa should be rich, fragrant and have a smooth mouthfeel. Given here are simple tips for making perfect besan halwa to get a deep roasted taste, silky consistency and perfect taste every single time you make it.
Roasting the besan is a very crucial step. While roasting, keep the flame low and stir until the besan turns golden and you get a nutty smell.
Make sure the sugar syrup is warm enough before adding it to the roasted besan. Warm syrup mixes smoothly, and there is no formation of lumps.
Do not pour the whole sugar syrup directly; instead, pour it little by little and mix continuously. This helps the besan soak the liquid evenly, resulting in a silky texture.
Using ghee in good quantity is essential to give besan halwa its classic richness and glossy look. If you use too little ghee, it can make the halwa dry.
Once the halwa is cooked, add cardamom at the end to preserve its fragrance. Garnish with chopped nuts and raisins for extra taste and flavour.
