If busy mornings do not allow you time for proper cooking, this quick stir-fry veggies recipe is exactly what you need to make for a wholesome lunch. It looks full of colour, is wholesome and ideal for packing for an office lunch rather than relying on takeaways.
1 cup broccoli florets 1 carrot, thinly sliced 1 capsicum, sliced ½ cup baby corn, sliced ½ cup mushrooms, sliced ½ cup French beans, chopped 1 onion, sliced 4 garlic cloves, minced 1-inch ginger, julienned 2 tbsp sesame oil 1 tbsp soy sauce 1 tsp chilli sauce (optional) 1 tsp vinegar ½ tsp black pepper powder Salt, to taste 1 tsp sesame seeds (optional) 2 spring onions, chopped
Wash the vegetables nicely and chop them into small, equal bite-sized pieces so that they cook evenly.
In a pan, heat a little oil and butter. To this, add minced garlic and ginger, and sauté for a minute until you get an aroma.
Now, add onions, carrots, beans and baby corn to this. Stir-fry them over high flame for about 3 to 4 minutes, then add broccoli, mushrooms and capsicum.
Add soy sauce, vinegar, chilli sauce, pepper and salt to this and toss everything so that the sauces get mixed evenly with the veggies.
Lastly, sprinkle sesame seeds and spring onions on it and pair with steamed rice or noodles for a wholesome lunch.
