The weekend is here and that means desserts are a top priority. Thanks to the magic of microwaves and a trusty mug, you can effortlessly create single-serve cakes that are moist, fluffy and have a hint of lemon in it! Check this super-easy recipe out.
4 tbsp self-rising flour 2 tbsp granulated sugar A pinch of salt 1 egg 3 tbsp melted butter 3 tbsp milk 1 tbsp lemon juice ½ tsp lemon zest
In a medium bowl, combine flour, sugar, and salt. Whisk to blend. Create a well in the centre.
Combine egg, butter, milk, lemon juice, and lemon zest. Whisk to create a smooth batter.
Pour batter into a 500ml microwave-safe cup. Place the cup in the microwave. Microwave on high for 90 seconds.
Add your favourite toppings, such as melted white chocolate, lemon curd, or whipped cream.
For the most flavourful lemon mug cake, use fresh lemon juice and zest from an organic lemon.
