Holi without thandai is like a pool party without cocktails. Thandai, gujiya, pua, and kanji are synonymous with the festival of colours. But preparing thandai is not possible without the powder blend. Here is its recipe.
2 tbsp dried rose petals 20 green cardamoms 2 tbsp melon seeds ¼ cup cashews 2 tbsp fennel seeds ½ cup almonds 2 tbsp poppy seeds 2 tbsp pistachios 1 tsp peppercorn 1-inch cinnamon 1-2 grams of saffron
Dry roast nuts like almonds, cashews, and pistachios.
Grind the nuts into a coarse mixture before adding seeds and peppercorn to the blender.
Once nuts and spices are combined, add saffron, cardamom, and rose petals.
Blend everything into a grainy powder.
Store the blend in an airtight jar in the fridge.
Add a tablespoon of thandai blend to 250ml of milk and enjoy the drink.
