Mango sticky rice is a simple Thai dessert that feels just appropriate for summer. Prepared with sweet mangoes, soft sticky rice, and creamy coconut milk, it is light, comforting, and easy to make at home.
1 cup sticky rice (glutinous rice) 1½ cups coconut milk 3 tbsp sugar ¼ tsp salt 2 ripe mangoes (sliced) 1 tbsp sesame seeds or mung beans (optional)
Wash the sticky rice thoroughly and soak it in water for at least 4–5 hours, or best if you can soak it overnight.
Drain the soaked rice and steam it using a steamer until cooked through. The grains should be soft but not mushy or too sticky.
In a pan, gently heat the coconut milk with some sugar and salt. Stir it constantly until the sugar dissolves thoroughly, keeping the mixture smooth and a bit thick.
Pour a portion of the warm coconut milk over the cooked sticky rice. Mix it gently and let it sit so that the rice absorbs the sweetness and flavour.
Slice ripe mangoes into neat pieces. Pick sweet, juicy mangoes, as they balance the creamy rice and also add freshness to the dessert.
Serve the sticky rice with mango slices on the side. Drizzle some extra coconut milk on top and sprinkle sesame seeds for a light, refreshing summer dessert.
