Thai curry paste is the flavourful foundation for most Thai dishes. Made with fresh herbs and spices, it gives a bold, aromatic base to curries and soups.
5 dried red chillies (soaked) 1 onion or shallot (chopped) 3 garlic cloves 1 tbsp lemongrass (chopped) 1 tsp ginger or galangal (grated) 1 tsp coriander seeds 1 tbsp oil Salt to taste
Combine all ingredients in a blender or mortar and pestle.
Grind to a thick, smooth paste, adding a few drops of water if needed.
Adjust salt and oil to balance flavour. Store in a glass jar and refrigerate for up to one week.
