A Mangalorean delicacy with a North Indian twist! Paneer Ghee Roast combines soft paneer cubes with the rich aroma of ghee and spicy-tangy masala - a perfect mix of indulgence and comfort.
200g cubed paneer 3 tbsp ghee 1 finely sliced onion 2 tbsp curd 1 tbsp tamarind paste 1 tsp jaggery (optional) Salt to taste Roast Masala: 4-5 dried red chillies 1 tsp coriander seeds ½ tsp cumin seeds 5-6 peppercorns 1 tsp fennel seeds 4 garlic cloves
Dry roast all masala ingredients till aromatic, then grind into a smooth paste with a little water.
Heat ghee in a pan, add sliced onions, and sauté till golden brown.
Add the masala paste and cook till it releases ghee.
Stir in curd, tamarind, jaggery, and salt; cook for 2 minutes.
Add paneer cubes, toss gently in the rich masala, and roast for a few minutes until coated in ghee and spice, then serve hot with neer dosa or paratha.
