A comforting Indian breakfast favourite, poori bhaji pairs fluffy golden pooris with a mildly spiced potato curry. Perfect for festive mornings or lazy weekends, it’s both hearty and flavourful.
For Poori: 1 cup wheat flour Salt to taste 1 tsp oil Water for kneading Oil for frying For Bhaji: 3 boiled mashed potatoes 1 sliced onion 1 slit green chilli ½ tsp mustard seeds ½ tsp turmeric powder Salt to taste Curry leaves & coriander
Knead wheat flour with salt, oil, and water into a stiff dough, roll into small discs, and deep fry until golden and puffed.
For bhaji, heat oil, add mustard seeds, curry leaves, onion, and chilli.
Add turmeric, then mashed potatoes and mix well.
Sprinkle salt and a splash of water; cook for 3-4 minutes.
Garnish with coriander and serve hot with pooris.
