Chicken cutlets are the ultimate comfort snack that are perfect to pair with evening tea, pack in a lunchbox, or as a party starter. This easy homemade version is full of flavour, filling, and also easy to make.

Ingredients

2 cups boiled and shredded chicken 1 medium boiled potato, mashed 1 small onion, finely chopped 1 green chilli, finely chopped 1 tsp ginger-garlic paste ½ tsp black pepper powder ½ tsp red chilli powder ½ tsp garam masala 2 tbsp chopped coriander leaves ¾ tsp salt (or to taste) 1 egg, beaten ½ cup breadcrumbs 3–4 tbsp oil (for shallow frying)

Step 1

In a large bowl, add shredded chicken, mashed potatoes, chopped onion, green chilli, ginger-garlic paste, salt, and all dry spices. Mix everything well.

Step 2

Add the chopped coriander and mix it again until the mixture holds its shape. If the mixture feels too soft, add one tablespoon of breadcrumbs to bind it better.

Step 3

Divide the mixture into small equal portions and shape into round or oval cutlets. Press it gently so that it remains firm and even.

Step 4

Dip each cutlet piece into beaten egg, coating it nicely. Then roll into breadcrumbs and cover with them to make a crisp outer layer.

Step 5

In a pan, heat oil on medium flame. Place the cutlets on it carefully and shallow fry for about 3 to 4 minutes on both sides until it turns golden brown.

Step 6

Remove into a tissue paper and serve hot with mint chutney, ketchup for a crispy, juicy bite.
