Tangy Lemon Rice To Repurpose Leftovers Into A Wholesome Meal

If you have leftover rice in the refrigerator, your next meal is sorted. South Indian lemon rice is one such filling dish that you can cook in under 5-10 minutes and satisfy your hunger. It is healthy and easy to digest. Take a look.

Ingredients

2 cups cooked rice 1 tsp chana dal 2 red chillies 1 tbsp oil 1 slit green chilli 2 tbsp peanuts 1 tsp mustard seeds ½ tsp turmeric powder 5-6 curry leaves Salt to taste 1 tbsp coriander leaves 1 tbsp lemon juice

Step 1

Heat oil in a kadhai and add mustard seeds to it.

Step 2

Once seeds start crackling, add chana dal and peanuts. Roast them.

Step 3

Add green chilli, curry leaves, and red chillies. Sauté for a minute before adding turmeric powder.

Step 4

Add the cooked rice and fluff it using a fork. Keep the heat high and toss those grains.

Sprinkle salt, drizzle lemon juice, and add coriander leaves.

Step 6

Lower the flame and let the flavours come together for a couple of minutes before serving.
