In many parts of India, green mangoes or kachchi kairi are now available in farmers’ markets. Boasting tangy flavours, it is a refreshing and seasonal ingredient to add to chutneys and dips. Here is one recipe that goes well with Indian snacks.
2 raw mangoes 2 green chillies 2 red chillies 80 grams of coriander leaves Salt to taste ½ tsp cumin seeds 2-3 garlic cloves 1 tbsp oil
Wash and peel raw mangoes. If the skin is soft, you can keep it intact.
Dice mangoes roughly and add them to the grinder.
Add coriander, green chillies, red chillies, garlic, and spices to the blender.
Grind the ingredients. If needed add 2-3 tablespoons of water.
Add oil and grind the ingredients again.
If you are happy with the consistency, store the chutney in an airtight jar.
