Transforming the traditional Indian Aam Panna into a frozen popsicle is a genius way to enjoy the seasonal benefits of raw mango in a modern format. These ice lollies are a concentrated burst of sweet, sour, and salty flavours, infused with the cooling properties of roasted cumin and fresh mint. Because raw mango is naturally high in pectin and essential electrolytes, these popsicles serve as a functional snack to prevent dehydration and heat exhaustion during the peak of the Indian summer. 

Ingredients

 1.5 cups Aam Panna concentrate (boiled raw mango pulp) 1/2 cup water (to thin slightly) 1/4 cup fresh mint leaves, finely chopped 1/2 tsp black salt A pinch of roasted cumin powder Honey or jaggery to taste

Step 1

Combine the mango pulp, water, black salt, and cumin powder in a jug, whisking thoroughly to ensure the spices are evenly distributed.

Step 2

Taste the mixture and add honey or jaggery if the raw mango is particularly tart, keeping in mind that flavours become slightly muted once frozen.

Step 3

Stir in the finely chopped mint leaves, which provide beautiful green flecks and a fresh aromatic note to every layer of the popsicle.

Step 4

Pour the mixture into popsicle moulds, insert the sticks securely, and freeze for at least six to eight hours or until completely solid before unmoulding.
