Malai broccoli offers a lovely mix of creamy coating and gentle char that makes every bite feel soft and satisfying. The yoghurt, cream and cashew base helps the florets stay tender while picking up warm spices.
2 cups broccoli florets ¼ cup thick yoghurt 2 tbsp cream 1 tbsp cashew paste ½ tsp garam masala ½ tsp chilli powder Salt and oil
Mix yoghurt, cream, cashew paste, garam masala, chilli powder and salt into a smooth marinade.
Coat the broccoli florets well and let them rest for 15–20 minutes.
Grill or pan-roast the marinated florets until lightly charred.
Brush with a little oil and serve hot.
