Kerala-style sweet and tangy tamarind chutney is a recipe for elevating the entire snack spread. If you haven’t tried it yet, you are missing out on the playfulness it brings to your taste buds. Follow this guide to make inji puli.
40g jaggery 100g ginger 1 cup water 5 tsp oil 35g tamarind ¼ tsp turmeric Salt to taste 3 green chillies 1 red chilli 10-12 curry leaves ¼ tsp fenugreek seeds ½ tsp mustard seeds
Peel and chop ginger. Soak tamarind in warm water and chop green chillies.
Sauté ginger in oil and add green chillies. Add the spiced powders.
Add tamarind pulp, water, and jaggery. Cook the ingredients well.
Prepare the tempering using mustard seeds, fenugreek seeds, curry leaves, and red chillies.
Let puli inji rest for an hour before serving it.
