When you are craving chicken, don’t just make any curry. Try making tamarind chicken curry featuring tangy and spicy notes with a creamy base that complements steamed rice. Here is a quick recipe for you.
3 garlic cloves 1 pound boneless chicken 1 cup tomato puree 1 diced onion 1-inch ginger ½ tsp pepper, fennel 2 tsp tamarind paste 1 serrano pepper 1.5 cups coconut milk 1 tsp kasuri methi, red chilli 2.5 tsp sugar 7-8 curry leaves Salt to taste 1 tbsp coriander powder, leaves
Heat oil in a pressure cooker and add whole spices along with ginger, garlic, and onion.
Add tomato puree, tamarind paste, and other spices.
Once the spices leave oil, add the boneless and skinless chicken to the cooker.
Pressure cook the ingredients on high flame for a whistle. Then, turn the flame to medium and cook for another 1-2 whistles.
Let the pressure release after turning off the flame and shred the chicken using a fork.
Sprinkle coriander leaves on top and enjoy tamarind chicken curry with rice.
