This tasty paratha is easy to prepare at home on a skillet or tava. Without sacrificing flavour, cooked and mashed potatoes are used in place of the typically utilised malai and yeast.

Ingredients

1 cup maida 1 cup atta 2 boiled potatoes 1 tsp salt ½ cup warm water 3 tbsp sesame oil ¼ cup coriander, chopped Ghee, for roasting

Step 1

In a blender, add the boiled potatoes. Blend until smooth without water.

Step 2

In a bowl, add maida, atta and salt. Mix well. Add blended potato puree. Add a little warm water.

Step 3

Knead into a dough. Divide into 2 equal portions. Then roll into 12-20 ball shapes.

Step 4

With a rolling pin, roll them out. Add ghee and flour, and roll out smoothly.

Step 5

Sprinkle some sesame oil on top. Add some chopped coriander. Roll again.

Step 6

Heat a tawa or skillet. Place paratha on top. Roast on both sides. Add some ghee to the edges.

Step 7

Repeat and serve with a choice of curry.
