Halwa, the rich Punjabi dessert, can be made with a wide range of vegetables and flours. The best type to make for winter is sweet potato halwa. Here’s a quick recipe to try with the root vegetable, shakarkandi.
500 grams sweet potatoes 200 grams sugar 100 grams ghee 4-5 green cardamom pods A pinch of saffron Chopped dry fruits (almonds, cashews, raisins)
Boil the sweet potatoes. Peel and mash them thoroughly. Set aside.
Heat some ghee and cook the mashed sweet potatoes till golden brown.
Add sugar and stir till it dissolves. Mix in crushed cardamom and saffron.
Garnish with chopped dry fruits and relish shakarkandi halwa.
