There is a distinct shift in cravings when the monsoon rains begin to fall. The heavy humidity calls for a snack that is simultaneously comforting and bright. This sweet corn chaat captures the essence of street food culture right in your own kitchen. By utilising simple pantry staples, it delivers a vibrant burst of flavour without requiring hours over a hot stove. The natural sweetness of warm corn kernels pairs flawlessly with the sharp tang of fresh lemon juice and the complex spice profile of chaat masala. It is an effortless bowl of comfort that provides a necessary contrast to grey afternoons.

Ingredients

2 cups boiled sweet corn kernels 1 small red onion, finely chopped 1 medium tomato, finely chopped 2 tbsp fresh coriander leaves, chopped 1 tsp chaat masala 1 tbsp fresh lemon juice

Step 1

Toss the boiled sweet corn kernels in a large mixing bowl while they are still warm so they absorb the spices perfectly.

Step 2

Add the finely chopped onions, tomatoes, and fresh coriander leaves to the bowl to provide a crisp and refreshing texture.

Step 3

Squeeze the fresh lemon juice over the mixture, sprinkle generously with chaat masala, and toss everything together to serve immediately.
