Cascara, made from the dried husk of coffee cherries, is traditionally consumed in parts of Latin America as a tea-like infusion. It carries mild caffeine and naturally fruity notes, which pair well with citrus to create a refreshing, layered summer drink.
1 tablespoon dried cascara 1 cup hot water 1 tablespoon lemon juice 1–2 teaspoons honey or sugar Ice
Steep cascara in hot water for 5–7 minutes, then strain.
Allow the liquid to cool completely.
Add lemon juice and sweetener, stirring until dissolved.
Pour over ice and serve chilled.
