Suji Vegetable Idli: Instant South Indian Recipe

To make your regular rice-based idlis healthier and gluten-free, you can make rava vegetable idlis. Made with suji and chopped veggies, it is the perfect breakfast or snack option for a South Indian meal.

Ingredients

1 cup suji 1 cup curd 1 cup mixed veggies (carrot, onion, beans, peas, etc.) 1/2 cup water 1 teaspoon salt 1/2 teaspoon cumin seeds 1/4 teaspoon mustard seeds 1 green chilli 1 teaspoon oil 1/2 teaspoon baking soda

Step 1

Heat a pan and roast suji for 2-3 minutes.

Step 2

Mix the roasted suji with curd, water, and all the spices till you get a smooth batter.

Step 3

Just before steaming, mix in baking soda.

Step 4

Grease the idli moulds, pour the batter, and steam to perfection.

Step 5

In about 10 minutes, your instant vegetable idlis will be ready to serve.
