Sev bhaji recipe is a bold Malwa-style curry where spicy onion-tomato gravy meets crunchy sev. A street-food favourite turned comfort meal, it delivers heat, texture, and soul in every bite.
2 cups thick sev 2 tbsp oil 1 cup finely chopped onions 1 cup tomato puree 1 tsp ginger-garlic paste 1 tsp red chilli powder ½ tsp turmeric powder 1 tsp coriander powder Salt to taste Fresh coriander for garnish
Heat oil and sauté onions until deep golden, forming the flavour base of the curry.
Add ginger-garlic paste and cook until the raw smell disappears completely.
Stir in tomato puree and spices, cooking till oil separates from the masala.
Add water to create a medium-thick gravy and simmer for a few minutes.
Add sev just before serving, mix gently, garnish, and serve hot with roti or pav.
