Sugar-free rusk is crisp, lightly sweetened, and oven-baked for guilt-free crunch. Perfect with chai or coffee, it skips refined sugar while retaining that nostalgic bakery-style texture.
2 cups whole wheat flour ½ cup milk ¼ cup melted butter 2 tbsp powdered jaggery or stevia blend 1 tsp yeast ½ tsp salt ½ tsp cardamom powder
Activate yeast with lukewarm milk and sweetener, letting it rest until slightly frothy.
Mix flour, salt, and cardamom, then knead into a soft dough using butter and yeast mixture.
Cover and let the dough rise until doubled, then shape it into a loaf.
Bake till cooked through, cool slightly, then slice evenly.
Toast slices again at low temperature until dry, crisp, and golden on both sides.
