Smooth and creamy, this sugar-free ice cream recipe is also devoid of dairy—making it ideal for anyone with dietary restrictions to enjoy it without having to curb their cravings. This versatile recipe can also be modified slightly by adding fruit pulp like strawberry or mango puree, for flavoured variations.
900 ml coconut milk, chilled 2 cups coconut cream ¼ cup maple syrup/honey 1 teaspoon vanilla paste
Place a loaf pan in the freezer while combining the chilled coconut milk with maple syrup and vanilla paste in a bowl.
Whisk the coconut cream to form soft peaks before folding it into the coconut milk mixture.
Combine gently to ensure that the air does not flatten from the cream, before transferring it to the cold loaf tin.
Place in the freezer for 2-3 hours until firm before scooping into portions and serving with a garnish of grated dark chocolate, toasted nuts or freshly chopped fruit.
