Making homemade fruit preserves does not require heavy syrups or artificial pectin. This two ingredient blackberry jam relies purely on the natural sweetness of fresh berries and the thickening power of chia seeds. Heating the blackberries releases their natural juices which the chia seeds absorb to create a thick spreadable texture. This sugar free alternative is perfect for spreading over toast or swirling into morning yoghurt.

Ingredients

2 cups fresh or frozen blackberries 2 tablespoons chia seeds

Step 1

Place the blackberries in a small saucepan over medium heat and cook for five minutes until they soften and begin to release their natural juices.

Step 2

Mash the softened berries gently using a fork or a potato masher to reach your desired consistency, leaving some chunks for texture if preferred.

Step 3

Remove the saucepan from the heat and stir in the chia seeds thoroughly to ensure they are evenly distributed throughout the warm fruit mash.

Step 4

Let the mixture sit for ten minutes as the chia seeds absorb the liquid and thicken into a jam, then transfer to a glass jar and store in the refrigerator.
