Potatoes and cauliflower are the humble vegetables that are often already present in a pantry. On busy mornings, you can whip up a stuffed aloo gobi paratha with this 10-minute Punjabi recipe.
2 cups atta Water as needed 2 potatoes, boiled and mashed 1 cauliflower, chopped 1 onion, chopped 1 green chilli, finely chopped 1-inch ginger, grated 1 teaspoon cumin seeds 1 teaspoon coriander powder 1/2 teaspoon red chilli powder 1/4 teaspoon turmeric powder 1/2 teaspoon garam masala Salt to taste
Mix whole wheat flour and salt. Add water and knead a smooth dough. Let it rest.
Mix mashed potatoes, cauliflower, green chillies, ginger, and all the spices.
Take small portions of the dough and roll them out into circles.
Add a spoonful of filling and enclose it to form a ball. Roll again.
Heat a tawa, cook the paratha on both sides and serve with dahi and achaar.
