Manchow soup is a popular Indo-Chinese dish. The soup is made with a combination of vegetables, noodles, and a variety of spices. The flavours are perfect for a winter’s day. Here’s a veg manchow soup recipe that will warm you up.
2 tablespoons of oil 1 teaspoon of chopped garlic 1 teaspoon of chopped ginger 2 chopped green chillies ¼ cup of chopped carrots ¼ cup of chopped cabbage 1.4 cup of chopped bell peppers 4 cups of vegetable stock
2 tablespoons of soy sauce 1 tablespoon of vinegar 1 tablespoon of corn starch 2 tablespoons of water 2 tablespoons of spring onions, chopped 2 tablespoons of chopped coriander leaves
Heat oil in a pan. Add the chillies, garlic and ginger. Sauté for a minute.
Add the chopped vegetables. Stir-fry for a few minutes. Add the stock, soy sauce and vinegar.
Bring the soup to a boil. Add in the cooked noodles. Add salt to taste.
Mix corn starch and water in a separate bowl. Add it to the soup as it cooks.
Simmer the soup for a few minutes. Garnish with spring onions and coriander leaves. Serve veg manchow soup, hot and spicy.
