A trip to Mumbai is incomplete without getting a vada pav from the street-side carts. To bring the magic home, here’s an authentic recipe for spicy vada pav. Pair it with a chutney and enjoy.
3 potatoes 1/2 cup besan 1 teaspoon chopped green chilli 1 teaspoon chopped ginger 1/2 teaspoon cumin seeds 1/4 teaspoon turmeric powder A pinch of hing Salt to taste Oil for frying Coriander chutney as per taste Tamarind chutney to taste 1 packet of pav
Heat some oil and saute cumin seeds, hing, chopped ginger, and green chilli.
Add boiled and mashed potatoes, turmeric powder, and salt. Cook till you get a fragrant mixture.
While the filling cools, make the batter by mixing besan, salt, turmeric powder, and water.
Take small portions of the mixture, coat them with the batter and deep fry till crispy.
Take pavs, slit them, and spread coriander and tamarind chutney on each side.
Finally, add the fried vada to the pav and enjoy it hot.
