Moong Dal Bhajiya, also called Moong Dal Pakora, are crispy, golden fritters made with soaked and ground split yellow moong dal, flavoured with spices and herbs. They are perfect as a tea-time snack or for rainy days!
1 cup moong dal 2 finely chopped green chillies 1-inch grated ginger 3 crushed cloves garlic 1 finely chopped onion 2 tbsp finely chopped coriander leaves 6-8 chopped curry leaves 1 tsp cumin seeds 1 pinch hing ½ tsp turmeric powder ½ tsp red chilli powder Salt to taste Oil for deep frying
Wash and soak the moong dal in water for 3-4 hours, then drain the excess water completely.
Grind soaked dal into a coarse paste without adding water and transfer to a bowl.
Mix in the onions, green chillies, ginger, garlic, coriander leaves, curry leaves, cumin seeds, turmeric, red chilli powder, hing, and salt
Now, beat the batter for 2-3 minutes to make it light and fluffy.
Heat oil in a deep pan. Once hot, drop small portions of batter into the oil using your fingers.
Fry on medium heat until they turn golden brown and crisp, and drain the excess oil on a paper towel.
