Indori poha is a famous street-style breakfast from Indore, which is known for its soft texture and sweet savoury flavour. It is topped with sev, pomegranate and onions and is a delightful snack.
2 cups poha 1 tbsp oil 1 tsp mustard seeds ½ tsp fennel seeds 1 finely chopped green chilli 1 finely chopped medium onion ¼ tsp turmeric powder 1 tbsp sugar Salt to taste 1 tbsp lemon juice 2 tbsp chopped fresh coriander leaves ½ cup sev 2 tbsp pomegranate seeds
Rinse poha in a colander until soft, drain, keep aside and mix turmeric, sugar and salt into the poha.
Heat oil in a pan, add mustard seeds, fennel seeds, when they splutter, sauté green chilli and onion until soft.
Add the prepared poha to the pan, mix gently and cook for 2-3 minutes on low heat, turn off the flame and add lemon juice.
Serve hot, garnished in sev, coriander leaves, and pomegranate seeds for a classic Indori touch.
