Corn bhajiya, or corn pakora, is a classic monsoon snack popularly made in the southern parts of India. To make the street-style bhajjis, here’s a quick recipe you can follow to enjoy the rainy weather.
1 cup sweet corn kernels 1/2 cup besan 2 tbsp rice flour 1/4 cup chopped onion 1-2 green chillies 1/2 tsp ginger-garlic paste 1/2 tsp cumin powder 1/4 tsp turmeric powder A pinch of hing 1/4 cup coriander leaves Salt to taste Water as needed Oil for deep-frying
Mix besan, rice flour, cumin powder, turmeric powder, hing, and salt.
Add corn kernels, chopped onion, green chillies, ginger-garlic paste, and coriander leaves.
Stir in water to form a smooth batter, then coat the corn kernels.
Heat some oil and deep-fry the corn bhajiyas in batches till crispy.
Drain the extra oil and serve with a chutney. Pair with chai and enjoy the rainy weather.
