Corn bhaji or bhajiya is a crispy snack that’s popular in the Southern parts of India. To make yourself a quick evening snack, try this corn bhaji recipe and pair the fritters with your hot cup of chai.
1 cup sweet corn kernels 1/2 cup besan 2 tbsp rice flour 1/4 cup chopped onion 1-2 green chillies 1/2 tsp ginger-garlic paste 1/2 tsp cumin powder 1/4 tsp turmeric powder A pinch of hing 1/4 cup coriander leaves Salt to taste Water as needed Oil for deep-frying
Mix besan, rice flour, cumin powder, turmeric powder, hing, and salt.
Add corn kernels, chopped onion, green chillies, ginger-garlic paste, and coriander leaves.
Gradually add water to make a batter, and make sure the corn kernels are well-coated.
Heat some oil and deep-fry the corn bhaji in batches till crispy.
Drain the extra oil and serve with a chutney and a cup of chai.
