This street-style chowmein is spicy, saucy, and bursting with vegetables; just like the kind sold at your favourite local stall. It’s quick, comforting, and full of nostalgia.
200 g noodles (boiled and drained) 1 onion (sliced) ½ capsicum (sliced) 1 carrot (julienned) 2 tbsp soy sauce 1 tbsp chilli sauce 1 tbsp vinegar Salt and oil as needed
Heat oil in a wok, add onion, carrot, and capsicum, and stir-fry on high heat.
Add boiled noodles and toss well.
Pour in soy sauce, chilli sauce, vinegar, and salt.
Stir-fry for 2–3 minutes until the noodles are glossy and coated in sauce, then serve hot.
