Crisp and airy waffles are as versatile a breakfast as pancakes, considering that they’re both similar in foundation. Having a waffle maker handy means that these chequered treats can be made in advance to cook until soft, and warmed up to crisp subsequently—just in time for breakfast.
2 cups all-purpose flour 2 tablespoons sugar 4 teaspoons baking powder 2 large eggs 1 teaspoon vanilla extract 1.5 cups milk, warmed ¼ cup melted butter ½ teaspoon salt
Combine the flour, baking powder and salt in a bowl while mixing together the remaining ingredients in a separate vessel.
Add the dry mixture to the wet ingredients and fold it in using a spatula, to form a smooth, lump-free batter.
Heat the waffle maker for 3-4 minutes before pouring in a scoop of the batter and closing the lid on the equipment.
Cook the waffle for 3 minutes on one side, before flipping the device to cook for another 3 minutes.
Ensure that the waffle is golden-brown and use a wooden stick to detach the waffle from the inner wall of the machine, if necessary.
Place it on a wire rack to air-dry before plating and serve with some maple syrup, whipped cream and seasonal fruit of choice.
