Stir-fried vegetable salad is not a side dish but a complete, fibre-rich meal. Colourful vegetables comprise a variety of essential vitamins and minerals. Note this recipe because you will be making this salad multiple times a week.
1 onion 1 cup bell peppers 1 capsicum Boiled baby corn 1 cup broccoli ½ cup coriander leaves 1 cup zucchini Salt, pepper to taste 1 tbsp honey 2 tbsp lemon juice 1 tsp nigella seeds 2 tbsp olive oil 1 cup mushrooms
Dice all the vegetables and keep them aside.
Heat a teaspoon of olive oil and saute onions and mushrooms.
When the water evaporates, toss the other vegetables and roast them.
Add the zucchini at the end and continue roasting with the other vegetables. Make sure they are crunchy.
Mix olive oil, coriander leaves, salt, pepper, honey, and lemon juice in a jar.
Pour it over stir-fried vegetables and enjoy.
