Khichdi is quick, easy to make and fast to digest too. Sabudana khichdi is a type of khichdi that is eaten during fasting or when you want to eat healthy. It’s crunchy, tasty, and you can add your own veggies to it as you like. This recipe will keep you hooked on sabudana khichdi.
2 cups of sabudana ¾ cups of water 1 and ½ bowls of peanuts 2 teaspoons of sugar 1.5 teaspoons of salt 4 tablespoons of ghee 2 teaspoons of cumin seeds 1-2 stems of curry leaves 2 finely chopped ginger 1-2 chillis finely chopped 3 boiled potatoes, cut into cubes Corriander leaves, chopped
Wash the sabudana and strain the water. Rinse it twice to remove extra starch.
Pour in the water. Let it soak for 5 hours.
Roast the peanuts. Let it cool. Grind the roasted peanuts. Add peanut powder to the soaked sabudana.
Add salt and sugar. Mix well. Keep aside.
Take a kadai, switch on the flame. Add the ghee, curry leaves and cumin seeds, ginger, chilli and potatoes.
Fry until golden brown. Add the peanut and sabudana mixture. Cook until sabudana is translucent.
Add lemon juice and coriander. Switch off the heat. Serve sabudana khichdi hot and fresh.
