Vegetable pulao or tehri is a favourite quick meal favoured by people in Uttar Pradesh. It is loaded with nutrients and easy to prepare when you are tired yet want to savour a home-cooked dish. Check out the recipe.
½ cup diced carrot ½ cup peas ½ cup cauliflower florets 1 sliced onion, green chilli ½ cup capsicum 1 diced potato 1-inch ginger Salt to taste 1.5 cups rice 1.75 cups water 1.5 tsp coriander ¼ tsp pepper, turmeric ½ tsp red chilli powder, cumin ¼ tsp garam masala 2 tbsp oil/ ghee
Wash all the vegetables. Dice or slice them and keep them read.
Rinse rice and soak it while you cook vegetables.
Heat ghee in a pressure cooker and add cumin seeds to it.
Saute ginger, green chilli, onion, turmeric, and red chilli powder.
Add other vegetables and saute them with spices. Add salt, rice, and water after 5 minutes.
Cook the ingredients for 1-2 whistles and serve vegetable pulao hot with raita.
