A sprouts omelette is a nourishing vegetarian dish that blends the protein of sprouts with the body of gram flour. Chopped vegetables add crunch and freshness, making it suitable for breakfast or a light lunch. It pairs well with chutney or warm toast.
1 cup mixed sprouts 2 tbsp gram flour ¼ cup chopped onions and capsicum ½ tsp turmeric Salt Water and oil
Blend sprouts with a splash of water until smooth.
Add gram flour, vegetables, turmeric and salt to create a pourable batter.
Pour onto a greased hot pan and spread evenly.
Cook on both sides until golden and firm. Serve with curd or chutney.
