Light but extremely comforting, spring onion soup is ideal for chilly winter days when you crave warmth without being too heavy.
2 tbsp oil or butter 1 cup spring onion whites, finely chopped ½ cup spring onion greens, finely chopped 1 tbsp garlic, finely chopped 1 tbsp ginger, finely chopped 1 tbsp soy sauce 1 tsp black pepper powder 1 tbsp cornflour 4 cups vegetable stock or water Salt to taste
In a pan, heat oil or butter, add garlic and ginger and sauté for a short while until it turns aromatic but not browned.
Add the chopped spring onion whites and sauté them on medium heat until it turns soft and lightly translucent, releasing mild sweetness.
Pour in the vegetable stock or water, stir it well, and let it boil gently so that flavours mix while remaining fresh and light.
Mix some cornflour with a little water. Add it to the soup while stirring constantly to get a smooth, light consistency.
Season with soy sauce, black pepper, and salt. Boil for 2–3 minutes, allowing the seasoning to enhance without overpowering the flavour of the onion.
Finish with some spring onion greens. Turn off the flame and serve hot for a perfect cosy winter evening.
