Spinach thepla is a wholesome Gujarati flatbread prepared with whole wheat flour, spices, and fresh spinach leaves. It makes a healthy and filling option for breakfast, lunch boxes, or travel snacks.
1 cup whole wheat flour 1 cup spinach leaves (finely chopped) 2 tbsp yoghurt 1 green chilli (chopped) ½ tsp turmeric powder ½ tsp cumin powder ½ tsp coriander powder ½ tsp carom seeds (ajwain) Salt to taste 2 tbsp oil (for kneading) Oil or ghee (for cooking)
In a bowl, mix wheat flour, spinach, yoghurt, chilli, turmeric, cumin, coriander powder, ajwain, salt, and oil.
Add water as needed and knead into a soft dough.
Divide dough into small balls and roll out into thin discs.
Heat a tawa and cook each thepla with a little oil or ghee until golden on both sides.
Serve warm with pickle, curd, or chutney.
