Spinach soup is a wholesome dish made with blended spinach, mild spices, and cream. It is rich in iron, vitamins, and provides warmth on cool evenings.
3 cups spinach (washed and chopped) 1 onion (chopped) 2 cloves garlic (chopped) 1 tbsp butter or oil 2 cups vegetable stock or water ½ tsp black pepper powder Salt to taste 2 tbsp fresh cream (optional)
Heat butter in a pan, add onion and garlic, and sauté until soft.
Add spinach and cook for 2 minutes until wilted.
Pour in stock or water, bring to a boil, and simmer for 5 minutes.
Blend into a smooth soup, reheat, add pepper and salt, and garnish with cream if desired.
