Earthy sautéed button mushrooms and tender fresh spinach leaves are folded into soft, velvety eggs cooked with a touch of butter and black pepper. Quick to whip up in under ten minutes, this wholesome breakfast provides sustained energy, vibrant color, and comforting savoury flavours to kick-start your day.
4 large fresh eggs 1 cup fresh button mushrooms, sliced 1.5 cups fresh spinach leaves, washed and roughly chopped 1 tablespoon unsalted butter or olive oil 1 clove garlic, finely minced 2 tablespoons milk or cream Salt and freshly ground black pepper to taste Optional: a sprinkle of grated parmesan or feta cheese
Crack the eggs into a bowl, add milk, salt, and pepper, and whisk lightly with a fork until just combined.
Melt the butter in a non-stick skillet over medium heat, add the minced garlic and sliced mushrooms, and sauté for four minutes until the mushrooms brown and release their moisture.
Toss in the chopped spinach leaves, cooking for one minute until they wilt completely into the mushrooms.
Lower the heat slightly, pour the whisked eggs directly into the pan, and stir gently and continuously with a spatula for two to three minutes until soft, creamy curds form just before removing from heat.
